Sea Sisters Smoked Rainbow Trout & Potato Salad with Capers, Sour Cream & Poached Egg

This Smoked Rainbow Trout Potato Salad is a simple yet elegant dish that brings together the best of fresh, wholesome ingredients. Creamy potatoes are gently dressed in All Dressed Up Everyday Dressing, pairing perfectly with the rich, smoky flavour of Sea Sisters Smoked British Rainbow Trout, while capers add a tangy burst of brightness.

Finished with a silky soft-boiled egg and a dollop of lemony sour cream, this recipe is quick to prepare and perfect for brunch, lunch, or a light supper. It’s a sustainable, flavour-packed meal that’s both comforting and sophisticated.

Ingredients
Serves 2
3 new potatoes
4 tbsp sour cream mixed with 1 tsp lemon juice and zest
4 tbsp All Dressed Up, Everyday House
X1 tin Sea Sisters Smoked Trout
2 soft boiled eggs, halved
1 tbsp of capers, rinsed dill fronds to garnish

Method

Cook the potatoes

Place the new potatoes in a pan of salted water, bring to the boil and cook until tender (a fork should slide in easily). Drain, halve while still warm, then gently toss with the Everyday House dressing. Set aside.

Cook the eggs

Bring a pan of water to a rolling boil, carefully lower in the eggs and cook for 6 minutes for a soft-boiled centre. Transfer to cold water, then peel and halve.

Prepare the sour cream

In a small bowl, mix the sour cream with the lemon juice and zest. Season with salt and black pepper to taste.

Assemble the salad

Spoon the lemony sour cream onto two plates. Top with the dressed potatoes, then flake over the smoked trout.

Finish & garnish

Add the halved eggs, scatter over the capers, and finish with fresh dill fronds. Serve immediately.

Notes: Serve these with a glass of English sparkling wine
