Cool Chile Co was founded in 1993 by Dodie Miller, who set out to bring the real flavours of Mexico to the UK.
What began as a small market stall selling dried Mexican chillies quickly grew as British cooks discovered the depth and character these ingredients bring to everyday cooking. Over time, the company expanded into producing traditional Mexican salsas, sauces and pastes, using authentic recipes and ingredients sourced directly from Mexico.
When good corn tortillas were hard to find in the UK, the team began making their own using imported masa harina and a tortilla machine. Today, Cool Chile still produces fresh corn tortillas alongside its range of chillies, sauces and Mexican pantry staples.
More than thirty years on, the business remains proudly family run, with Dodie’s son Jackson now working alongside her and the team to continue bringing authentic Mexican ingredients to home cooks and restaurants across the UK.
